Mace-Infused Biryani

2 cups basmati rice, soaked for 30 minutes
1 lb chicken or vegetables, cut into pieces
2 tablespoons oil or ghee
1 large onion, sliced
2 tomatoes, chopped
1 teaspoon ginger-garlic paste
2 whole mace pieces (Javitri)
2 bay leaves
4 cloves
4 green cardamom pods
1 cinnamon stick
1 teaspoon turmeric powder
1 teaspoon garam masala
Salt to taste
Fresh cilantro and mint leaves for garnish

Heat oil or ghee in a large pot over medium heat.
Add sliced onions and sauté until golden brown.
Add ginger-garlic paste and sauté for another minute.
Add chopped tomatoes and cook until soft.
Add chicken or vegetables and cook until lightly browned.
Add turmeric powder, garam masala, and salt. Mix well.
In a separate pot, bring water to a boil with whole mace, bay leaves, cloves, cardamom, and cinnamon stick.
Add soaked rice to the boiling water and cook until 70% done.
Drain the rice and layer it over the chicken or vegetables.
Cover and cook on low heat (dum) for 20-25 minutes.
Garnish with fresh cilantro and mint leaves before serving.
